Healthier Chocolate Rice Crispy Fridge Cakes

Recently I shared with you, admittedly, a ratherΒ indulgent Chocolate Rice Crispy Fridge Cake recipe, which probably left most adultsΒ wishing they wereΒ kids again! Β No need to worry though, these tasty chocolate treats are perfectly bite size (about two bites to be exact, a theory tested several times, although, I’m sure some of you will argue theyΒ canΒ be done in one!)

Deliciously chocolatey, enough toΒ satisfy the fiercest of chocolate cravings. Β Vegan, gluten free, refined sugar free and packed full of healthier options. Β They contain:

  • puffed brown rice
  • raw cacao powder
  • coconut oil
  • maple syrup
  • nut butter
  • dried fruits

This recipe is adapted from Deliciously Ella’sΒ  quinoa cacao crispy treats recipe, which I have made twice before. Β Essentially, the only difference here isΒ the addition of the mixed dried fruits and my toppings. Β I also used puffed brown rice instead of puffed quinoa. Β Puffed quinoa is hard to find in HK, not to mention expensive.

As a bonus, theseΒ Healthier Chocolate Rice Crispy Fridge Cakes are easy and super quick to make too. Β They take no more than 10 minutes to mix, 10-20 minutes to set in the freezer before you can be happily munching away.

  • desiccated coconut
  • chopped pistachios
  • coloured puffed rice
  • mini eggs (a girl has her weaknesses!)

Continue to enjoy the season guilt free with these deliciously chocolatey, bite size Healthier Chocolate Rice Crispy Fridge Cakes. Guaranteed to satisfy the fiercest of chocolate cravings. Vegan, gluten free, refined sugar free and packed full of healthier options.

Ingredients
  • 60 g puffed brown rice (2 cups) can use puffed quinoa too
  • 5 tbsp coconut oil
  • 2 tbs nut butter cashew, peanut or almond
  • 35 g raw cacao powder (1/3 cup)
  • 60 g mixed chopped dried fruit (1/3 cup) sultanas, apricots, sour cherries
  • 2 tbsp desiccated coconut
  • 2 tbsp pistachios chopped
Instructions
  1. Place the coconut oil, cacao powder, maple syrup and almond butter into a saucepan and gently heat it for a few minutes until all the ingredients have melted and combined.  The mix should be smooth and glossy.  

  2. Place your puffed brown rice or quinoa pops into a mixing bowl.


  3. Pour the melted chocolate mix over your puffed rice or quinoa pops and stir it all together, until all the puffs are evenly coated in chocolate.


  4. Spoon the mix into 24 small cupcake cases and place in the freezer for 10 to 20 minutes.

    I don’t associate food with guilt, I personally think it is an incredibly unhealthy relationship to have with food. I do tasty though and these definitely sound really tasty.

      The texture is less crispy than the regular crispy treats but the flavours are more satisfying I find.

      Yes HK food shopping can be limiting and pricey. I would make them more often it the ingredients were more readily available.

    What a fun way to use the seasonal candies! One of my favorite childhood treats was rice crispy treats … add some chocolate and I’m afraid I won’t be able to say no or stop eating until the pan is empty.

    We’re very familiar with the traditional rice krispies treats, my youngest loves them. I’ve never seen them made this way, it sounds like an intriguing flavor and texture.

    When you can make a dessert that is healthy and delicious, you don’t feel guilty when you have two!! Love the ingredients in here…especially the cacao powder…I use it all the time. Great way to enjoy dried fruit.
