Meal Plan: Week Beginning 22nd Feb
Have you done a meal plan for the week ahead yet? Didn’t get time? I find it really helpful to plan ahead whenever I can, I know it’s easier said than done. I usually sit down on Saturday or Sunday, over a cup of coffee or glass of wine (dependant on the time of the day!) and plan out five days of meals ahead. I don’t worry about the weekends, they get sorted nearer the time, but as long as I’ve the week days sorted then I feel a lot more organised for the busy week ahead. Take a look and hopefully you’ll find some inspiration for your week ahead. The menus this week is heavily Jamie Oliver oriented, but that’s no bad thing!
What are you having this week and what meals are you most looking forward to?
Monday (22/02/16): Pasta Puttanesca, with a large bowl of edamame. Already tried this one out on the kids and they love it. I’m still hoping anchovies aren’t classed as a meat as this is supposedly our Meat Meat Free Monday dish this week !
Tuesday (23/02/16): Chicken wrapped in parma ham, with greek salad & brown rice. A family favourite, simple baked chicken dish, excellent served with crusty bread for dipping up the cooking juices!
Wednesday (24/02/16): Beef Stroganoff, serve with French Bean salad and brown rice. Another easy mid-week meal.
Thursday (25/02/16): Chicken Fajitas, maybe cook and extra breast or two on Tuesday and use up any leftovers in the Fajitas. Great for packed lunches too if there are any going spare!
Friday (26/02/16): Ginger & Honey Chicken Wings, serve with kale and brown rice. Kids love chicken wings, sweet and sticky, a perfect Friday night treat.

Questions for the puttanesca: where do you get your passata? What type of anchovies do you choose? Thanks!

To be honest I used a tin of plum tomatoes which I get from Stabletrading.net (an Italian wholesaler). When I do buy passata I like the one from Fusion that comes in a large glass bottle, 700ml and I think the brand is “Granoro’.
