Welcome to my Weekly Meal Plan Week 11. Of course we’ll be taking on an Irish theme for the week ahead, as many of you, whether you’re Irish or not, will be celebrating St. Patricks day on Friday 17th March.
Weekly Meal Plan (Week 11)
For those of you not familiar with my weekly meal plans they work as follows:
“I post mainly week day dinner recipe ideas Monday through to Friday and throw in some suggestion on possible week-end meals which will serve you twice. I’ll occasionally talk of breakfasts, snacks, or dessert idea and I’ve recently added in Monday to Friday packed lunch ideas too. If you’d like to read further on packed lunch ideas you can find a whole list of More than 20 No Sandwich Packed Lunch Ideas here. Feel free to mix things up ie: you don’t have to make every single recipe, or on the day stated. I’m always changing days around to suit the family schedule, eg: you may want to make Monday’s recipe on Friday, or you may only want to make one of the recipes during the week – just use the weekly meal plan is a guide not a rule!”
Weekly Meal Plan (Week 11)
Monday:
After All Meat Free Monday is about Green so we should definitely be having Pesto pasta today. Grab a quick and easy Pesto sauce here. Bored of basil? Then try Kale Pesto instead.
Kids Packed Lunches: Ham & Cream Cheese Bagels ! Oh, I’m just so predictable on a Monday, but there is need to be too hard on ourselves is there.
Tuesday:
Flank Steak Fajitas with grilled onion & peppers. If you roasted some lovely marinaded flank steak at the weekend then today you can make them into these yummy fajitas.
Kids Packed lunch: Chicken Pesto Pasta. Add a few pieces of cooked chicken to your Monday’s meat free version.
Wednesday:
Thai Sticky Chicken Wings – My kids love chicken wings and these one are packed full of flavour. Serve with rice and chinese greens.
Packed Lunch: Chicken Wings & rice or any Flank Steak Fajitas you may have leftover.
Thursday:
Avocado Dijon Turkey Burgers – Look no further for your healthy burger. However, I will be serving them in burger buns for the kids in order to avoid those disapproving looks!
Packed Lunches: Needless to say, I hope you bought extra turkey so you can be sure to have a few burgers leftover for lunch the next day. Serve them in a Pitta Bread for a change.
Friday:
Easy one pot Dublin Coddle (One Pot Irish Potato, Sausage & Onion Stew). How about a nice traditional Irish Stew with home made Traditional Irish Brown Soda Bread on the side …. mmmmh!
Packed Lunches: I’ve no idea! Yes, that happens (often in fact!), I’m going to suggest fishfinger sandwiches because they love them and it’s Friday.
Weekend:
If you love the texture and taste of Red Velvet Cake then you may like to give these Green Velvet Matcha Cupcakes a go. If you don’t like match just replace the matcha powder with 2 drops of blue and 12 drops of yellow Wilton Colour Right food colouring.

You know I only managed 2 out of the recipe from my meal plan, the chicken wings were one of them (I used drumsticks however) and everyone single one went – always a good sign!

Thank you Kirsty. We love Pesto too. It’s about one of the only green foods along with guacamole that most my kids will eat.
