Welcome to my Weekly Meal Plan Week 10 (March 2017).  Let’s get straight to the point. Who likes Pie?  Well there’s good news – because next week is British Pie Week!

For those of you not familiar with my weekly meal plans they work as follows: 

“I post mainly week day dinner recipe ideas Monday through to Friday and throw in some suggestion on possible week-end meals which will serve you twice. I’ll occasionally talk of breakfasts, snacks, or dessert idea and I’ve recently added in Monday to Friday packed lunch ideas too.  If you’d like to read further on packed lunch ideas you can find a whole list of More than 20 No Sandwich Packed Lunch Ideas here. Feel free to mix things up ie: you don’t have to make every single recipe, or on the day stated. I’m always changing days around to suit the family schedule, eg: you may want to make Monday’s recipe on Friday, or you may only want to make one of the recipes during the week – just use the weekly meal plan is a guide not a rule!”

Weekly Meal Plan Week 10 

Monday:  For Meat Free Monday, this Cauliflower Cheese Tart looks like a perfect start the week. Recipe by Amuse Your Bouche, a cheese loving vegetarian.

Kids Packed lunch: Fresh bagels with smoked salmon & cream cheese. My usual go to Monday bagel packed lunch!

Tuesday: At the weekend I slow cooked a joint of Boston Butt we ate as pulled pork. I had lots leftover and froze some. Today I’ll be using up leftovers to make Pulled Pork Burritos, with all the trimming – guacamole, sour cream, salsa etc. You could also use Tacos if you prefer to go with the Taco Tuesday theme!  We enjoyed the pulled pork, but I wouldn’t use that recipe again, so I’m sharing another one that I have used before and was delicious. This slow cooker pork carnitas recipe is excellent.  

Kids Packed lunch: Make extra burritos to go into packed lunches.

Wednesday: Back on the Pie theme with this most amazing looking Guinness Meat Pie. Serve with cabbage and peas.

Kids Packed lunch: Do you have any Cauliflower & Cheese tart leftover? If so, use it up in the packed lunches.

Thursday: Chicken & Rice One Pot – this is an all time family favourite. The addition of Chorizo to this dish makes it even more yummy. Serve with roast green beans and crusty bread.

Kids Packed lunch:   Hot Soup and a roll.

Friday:  Leftover Chicken Pie. I tend to make pies with leftover meat, which is the traditional concept of pie making.  If you don’t have any leftover chicken then you can quickly tray bake several chicken thighs to use in this recipe. 

Kids Packed lunch: Ham & Cheese pitta breads with cucumber sticks & a pot of hummus.

Weekend:

Ideally have a roast so you can reinvent leftovers for one night next week!  We will probably have Beef this week.  Try the less expensive flank steak, it’s perfect for marinating. Here’s a Grilled Marinated Flank Recipe.

Tip: Bake some sweet treat for packed lunches for the week ahead. Why not try these Hazelnut & Chocolate Cupcakes ?

    I can’t believe I forgot all about it being pie week….I think I will have to have some for lunch one day!

      Thank you Kim, there’s still time for pie making. To be honest I’ve had little time and had buy the pastry for both my pies this week.
