Welcome to my weekly meal plan week 14. We will be away travelling this week and next, part of which will be a campervan adventure. I thought it would be a good idea to plan some easy CAMPER VAN MEALS to enjoy with all the lovely fresh produce that will be available to us.
Anyone else off camping for the holidays?
Weekly Meal Plan (Week 14): Camper Van Meals
For those of you not familiar with my weekly meal plans they work as follows:
“I post mainly week day dinner recipe ideas Monday through to Friday and throw in some suggestion on possible week-end meals which will serve you twice. I’ll occasionally talk of breakfasts, snacks, or dessert idea and I’ve recently added in Monday to Friday packed lunch ideas too. If you’d like to read further on packed lunch ideas you can find a whole list of More than 20 No Sandwich Packed Lunch Ideas here. Feel free to mix things up ie: you don’t have to make every single recipe, or on the day stated. I’m always changing days around to suit the family schedule, eg: you may want to make Monday’s recipe on Friday, or you may only want to make one of the recipes during the week – just use the weekly meal plan is a guide not a rule!”
Weekly Meal Plan (Week 14): Camper Van Meals
Monday:
Campfire mac’n’cheese with some foil parcel baked vegetables. A simple and tasty Meat Free Monday meal.
Tuesday:
One pan lamb couscous, is a great camping meal as it only takes one pan and quick and easy to cook and we are sure to find some real tasty lamb chops where we’ll be going.
Wednesday:
Naturally we’ll be flipping burgers one night. They won’t be my homemade burger recipe, but nonetheless I’m sure we’ll find a good local butcher to buy from.
Thursday
Look at these Idaho Sunrise Eggs. Eggs & Bacon in a Baked Potato – genius !
Friday:
Fish and vegetables wrapped in foil parcels come to mind for a Friday meal, something along the lines of Ranch Salmon Foil Packets.
Weekend:
Thinking we can bbq some some local steak, slice up and place into a warmed up tortilla wraps, and serve with a nice salad and maybe some BBQ corn on the cob.
Sweet Camp Fire Treats
Camping wouldn’t be complete without some sweet camp fire treats now would it!?
I won’t be making a meal plan for week 15 next week so I’ll see you all in week 16. Enjoy your Easter and may it be filled with chocolate and bunnies. xx 🍫🐇
