Weekly Meal Plan Week #18 Weekly Meal Plan (Week 18)

I know a few of you made the Macaroni Cheese and the Beef Olives from last week’s weekly meal plan.  Did anyone try the Pesto Salmon? And how about the Brownies?  I know I’ve said this before, but I do love to know how you get on and whether you liked the recipes.  And if you have any questions please don’t hesitate to ask.

In case you’re interested the most popular recipe to date has been my personal favourite Paolozzi Meat Sauce.  I’ve enjoyed reading the comments both on the recipe post and on Facebook from both new found and old relatives; friends of relatives; and people with a family connection in some way, be it through their childhood Paolozzi fish and chips eating days or memories of travelling in the Paolozzi ice cream vans when little.   I love hearing all your stories!

I hope you find some inspiration in this week’s suggested weekly meal plan. There is nothing complicated on here and at least three of the recipes can be prepped a day or two ahead.

Monday: For Meat Free Monday you can make a simple Spaghetti dish (or spiralized courgette for a low carb option) with this basic rustic Roasted Tomato sauce.

Tuesday: Chicken Tacos – Made this and the kids loved it.  I kept the spicy seasoning and jalapeno peppers on the side to avoid complaints.

Wednesday: Spanish Tortilla – Can be made the day before.  Delicious hot or cold served with a selection of side dishes, such as: tomato and mozzarella salad, cured hams, olives, crusty bread, fried chorizo, and so on. Also great for the packed lunches if you have any leftover.

Thursday: Honey Sriracha Chicken  – I like the sound of this recipe, but must confess I’ve not yet put it to the test.

Friday: I’m only human and I don’t cook every day!  I sometimes just run out of ideas, don’t feel inspired, too busy with work,  just wasn’t organised enough, or planning a nice meal out “without” the kids.   I try to be prepared for such eventualities by having a stash of  Marks & Spencer meals in the freezer.  My kids just love the M&S meat pies, pizzas and lemon sole goujons… and no doubt wish we went out more often!

Easy packed lunch or picnic food idea:

    We made General Tso’s Chicken last week. Left out the chillies but the kids still didn’t like it. We loved it though and will make it again.
