Hi, hope you all had a good week and are looking forward to the Easter holidays!

With next week’s weekly meal plan we are attempting to start off frugally and gradually work ourselves up towards, that unavoidable over indulgence which is, undoubtedly, going to take place at the weekend!

Monday: For Meat Free Monday this week we will be making a Vegetarian Quinoa & Black Bean Chilli. I’ve made this a couple of times now using a Red Quinoa and it gets a big thumbs up from my meat loving husband – and that is saying something!   Alternatively, and even better value for money is a lovely organic quinoa you can purchase from our very own, Hong Kong  based,  Kinoa-Shop.com, only HK$98 for a pack of 500g – check them out for lots of other great products too.

 Tuesday: Red Pesto Chicken and Rice One Pot – a word of mouth recipe given to me by my mother many years ago when I began having to cook for my growing family. This is a very simple but tasty recipe,  best saved for those days you are short on time.  

Wednesday:  Pork Saltimboca with sautéed potatoes – Traditionally Saltimboca (meaning jump into the mouth!) is made with veal, but if like me are not so keen on buying veal it work really well if not better with pork.

Thursday: Chinese Spare Ribs in Hoi Sin Sauce served with rice and Chinese greens.  Have been making this recipe ever since I picked up the recipe card in Waitrose over 10 years ago! A family favourite that we never tire of.

Good Friday:  Grilled Seabass – The day on which Christ was crucified and therefore considered in the Christian world to be the most somber day of the entire yehot cross buns gifar.  Hot Cross Buns are traditionally eaten for breakfast and from this day comes the tradition of eating fish for Friday.

 

Easter Sunday: I don’t normally meal plan for the week-ends but this coming Sunday is special. For Easter Sunday we traditionally eat Roast Lamb.  And of course chocolate for dessert, try this Easy chocolate Tart, which you could make more seasonal by decorating with colourful chocolate eggs.
