Weekly Meal Plan Week #17

WEEKLY MEAL PLAN (WEEK 17)

Wow, these weeks just fly by don’t they? There goes another!  How’s your week been?  Wet, humid, damp?

Did you make anything from last week’s meal plan?  If so, would love to know how you got on and whether you liked the recipes, both the linked and Gillian’s Kitchen recipes. Did you have any favourites and is there anything you’d like to see more of?

Ok, enough of the interrogation!  I hope you find something in this week’s weekly meal plan to please your family and to brighten up any prospect of another gloomy week.

Monday: For Meat Free Monday – Rather a lovely vegetable heavy Macaroni Cheese with Cauliflower & Kale.

Tuesday: General Tso’s Chicken – Minus the chillis and sichuan peppers makes this a kid friendly version but still very tasty for adults too.

Wednesday:  Beef Olives – Serve with tagliatelle, potatoes or rice. Simple and tasty mid-week beauty.

Thursday: Flank Steak Chilli and Lime Fajitas – Was a winner with the kids. Don’t forget to marinade the beef overnight for more depth of flavour.

Friday: Pesto Salmon en Croûte – A regular in our house when it come to serving salmon.  Delicious served with my favourite green bean salad and new potatoes.

At the weekend

Burmese Pancakes –  A gluten free and refined sugar free recipe directly from the Chef at the Governors Residence Yangon.  Make a stack and freeze some for whenever you need a quick and easy, healthy but filling breakfast.  Top with your favourite fruit, nut butter, yoghurt, honey, seeds and nuts of your choice.

Nigella Lawson Chocolate Brownies – The weather in Hong Kong has been so gloomy over the last couple of weeks, we really need some cheering up right?  This no fail brownies recipe is capable of brightening up any rainy day or week!
