Weekly Meal Plan Week 13
HAPPY EASTER! I hope you’ve all been having a great Easter Weekend.
What did you do? Stay at home and cook for the family or go out and let someone else do all the work?
I chose the latter. Am currently in Ho Chi Minh having both a cultural and gastronomic long weekend away.
Yesterday we visited the Cu Chi tunnel complex followed by the War Remnants museum this morning. With our new found knowledge and even greater admiration for the local Vietnamese people, we found ourselves in need of some lighter relief – which we found in the form of an excellent hotel buffet lunch with free flowing Champagne!
For the week ahead I’d like to propose the following meal plan:
Monday: For Meat Free Monday this week I propose Jamie Oliver’s Vegeree Not Kegeree.
Tuesday: Slow Braised Pork with simple steamed vegetables and mashed potato.
Wednesday: One Pot Lasagna – if you love Lasagna, but don’t have the time mid-week to make it give this recipe a whirl. I used Passata instead of Prego Sauce and chose to omit the tub of heavy cream, which seemed rather unnecessary!
Thursday: Lamb Koftas served with Pita Breads, thinly sliced cucumber, raita and a mango chutney, makes for an uncomplicated mid-week meal but still feels special.
Friday: Brazilian Fish Stew – simply gorgeous !
At the Weekend:
Weekend Roast: Empire Roast Chicken – a nice twist on the traditional roast – thanks Stella for introducing us to this recipe!
Baking: Should you still be craving chocolate after last weekend’s overindulgences, you won’t be disappointed with these Hazelnut and Chocolate Cupcakes, recipe from The Hummingbird Bakery Cupcakes & Muffins.
