Welcome to my weekly meal plan week 13 and Happy Mother’s Day to all you UK Mums. 💕🌸
I reckon the week ahead will be quite a busy one with school events, Easter bake sales and maybe some of you are planning on going away on holiday therefore trying to cram 3 weeks of work into 1. Looks like a hectic week ahead, lets keep meals QUICK & SIMPLE ( that means less than 30 minutes prep & cook), without compromising on taste!
Weekly Meal Plan (Week 13)
For those of you not familiar with my weekly meal plans they work as follows:Â
“I post mainly week day dinner recipe ideas Monday through to Friday and throw in some suggestion on possible week-end meals which will serve you twice. I’ll occasionally talk of breakfasts, snacks, or dessert idea and I’ve recently added in Monday to Friday packed lunch ideas too.  If you’d like to read further on packed lunch ideas you can find a whole list of More than 20 No Sandwich Packed Lunch Ideas here. Feel free to mix things up ie: you don’t have to make every single recipe, or on the day stated. I’m always changing days around to suit the family schedule, eg: you may want to make Monday’s recipe on Friday, or you may only want to make one of the recipes during the week – just use the weekly meal plan is a guide not a rule!”
Weekly Meal Plan (Week 13)
Monday:
Spring Greens Spaghetti – I was going to suggest pesto pasta for today, because I always have pesto sauce to  hand and this Spring Greens Spaghetti from Rough Measures, is a perfect way to use it.   You will have to double (or more!) the quantities of the recipe to serve a family of 4  or more. Â
Kids Packed Lunches: Ham & Cream Cheese Bagels
Tuesday:Â
This Chicken Broccoli Alfredo looks just the ticket for a busy Tuesday.
Kid Packed lunch: Leftover pasta meal.
Wednesday:
Another quick and easy meal big on taste is this Pork Saltimbocca.  Make sure you make extra as they are yummy as a sandwich filler.
Packed Lunches: Â Do make sure you make enough think pork saltimbocca because these tate fantastic in a crusty bread roll. Â Slightly reminiscent of my childhood growing up in Portugal where a pork steak sandwich in a “papo seco” is called a “Prego”.
Thursday
Mongolian Beef by Dinner then Dessert sounds yummy and also can be made in under 30 minutes.
Packed Lunch:Â Noodles with Mongolian beef.
 Friday:
These Sheet Pan Prawn Fajitas look like the perfect Friday dish to me. One pan, less than 30 minutes, and how tasty do those Fajitas look? Unfortunately I have one child who is allergic to prawns despite everyone else  loving them.  It will feel slightly cruel eating them in front of her!!
Packed Lunches:Â Fish finger fajitas as I’ll be having to cook some for my prawn allergic daughter anyway.
Weekend:
A think a spot of baking is in order to practise for Easter. Â How about these super cute bunny butt cupcakes?!
