I know I’ve been gone for a long while. Sorry! A very long while in fact. I didn’t make it back in September as I thought I might, I got busy with expanding my blog elsewhere, which has actually really paid off. Now I’m back and hope you are all doing well.
As a little extra this time round, I’ll also be adding some packed lunch ideas so we can all try to avoid those endless cheese sandwiches for the kids. If you’d like more packed lunch ideas which don’t involve a single sandwich, then head over to my recently updated “No Sandwich Packed lunch Ideas” post. For those of you are not familiar with my weekly meal plans they work as follows:
“I post a dinner recipe idea for Monday through to Friday and suggest some possible week-end meals. I may throw in a few breakfast, snack, dessert or packed lunch ideas too. Feel free to mix things up ie: you don’t have to make every single recipe, or on the day stated. I’m always changing days around to suit family schedule changes, eg: you may want to make Monday’s recipe on Friday, or you may only want to make one of the recipes during the week – just use the weekly meal plan is a guide not a rule!”
Weekly Meal Plan (Week 8)
Monday: A perfect Meat Free Monday meal for us this week will be Linda’s Mushroom and Kale Stuffed Shells – don’t they look just delicious?
Kids Packed lunch: Fresh bagels with ham & cream cheese filling. I generally always start a week with bakery bought bagels as I like to keep Sunday evenings as easy as possible.
Tuesday: Hoi sin ribs & rice – with corn on the cob and green beans.
Kids Packed lunch: Pesto chicken pasta.
Wednesday: Greek Burgers with pitta breads – serve with a side salad and some tzatziki (use a potato peeler to peel some cucumber ribbons, add yoghurt, a little salt & pepper – yum!)
Kids Packed lunch: leftover Hoi sin ribs & rice
Thursday: Chicken and zucchini Yakitori
Kids Packed lunch: Greek Burgers in pitta breads
Friday: Toad in the hole – I seem to have stocked up on waitrose sausage that were on offer over the holiday’s so it’s time to get them out the freezer and make good use of them. Serve with green peas, mashed potato and onion gravy.
Kids Packed lunch: Hot dogs if you have any spare sausages from your toad !
Weekend:
Ideally have a roast so you can reinvent leftovers for one night next week!
We may roast a leg of lamb, so look out for some lamb based leftover dish next week.
Bake some fresh sausage rolls for kids supper on Sunday night and make sure you have some left for a packed lunch next week.
