Welcome to my weekly meal plan week 12. Last week I had a busy week in the UK away from the Kitchen. Not sure my weekly meal plan got followed whilst I was away but I did manage to get in a couple of the recipes towards the end of the week once I returned. Thankfully, next week I’m around all week and I’ve had a special request to include plenty of family favourites. Also a little reminder….don’t forget it’s UK Mother’s Day next Sunday for all you UK Mums!
Weekly Meal Plan (Week 12)
For those of you not familiar with my weekly meal plans they work as follows:
“I post mainly week day dinner recipe ideas Monday through to Friday and throw in some suggestion on possible week-end meals which will serve you twice. I’ll occasionally talk of breakfasts, snacks, or dessert idea and I’ve recently added in Monday to Friday packed lunch ideas too. If you’d like to read further on packed lunch ideas you can find a whole list of More than 20 No Sandwich Packed Lunch Ideas here. Feel free to mix things up ie: you don’t have to make every single recipe, or on the day stated. I’m always changing days around to suit the family schedule, eg: you may want to make Monday’s recipe on Friday, or you may only want to make one of the recipes during the week – just use the weekly meal plan is a guide not a rule!”
Weekly Meal Plan (Week 12)
Monday:
Spinach & Ricotta Cannelloni is always a favourite Meat Free Monday Meal in our house and I’ve had a special request for a few family favourites this week.
Kids Packed Lunches: Ham & Cream Cheese Bagels !
Tuesday:
Tray Baked Chicken – Another family favourite and well placed on a Tuesday because we don’t get in till gone 6pm so this dish can be all prepped ahead of time ready to throw in the oven and be ready in less than 30 minutes. Will serve with a green salad and plenty of crusty bread to dip up the yummy juices.
Kids Packed lunch: Chicken & avocado in Pitta bread
Wednesday:
Toad in the Hole – Yet another comfort food classic
Packed Lunches: Hot dogs in a roll or sausage sandwiches with ketchup.
Thursday:
Moroccan Lamb Traybake – I’m in the mood for traybakes and this dish from Easy Peasy Foodie sounds wonderful.
Packed Lunch: Couscous & roasted vegetable salad
Friday:
I’ve not tried these Salmon Curry Wraps but they do looks so delicious and perfect for fishy Friday.
Packed Lunches: Fill any leftover wraps with filling of your choice.
Weekend:
Well I think there is some cake baking in order and either you’ll be doing it yourself or you’ll need to drop a few heavy hints! My favourite is Victoria Sponge Cake – hint, hint!
Sunday (Mothering Sunday UK):
Paolozzi Meat Sauce is traditionally eaten on a Sunday and is a perfect meal for us this Mothering Sunday. This is a traditional Italian recipe handed down from my Grandmother and I call it Paolozzi Meat Sauce in her memory. Whenever I make a meat sauce I always make a large batch and luckily, all I need to do today, is take a portion out of the freezer. If you get any leftover you can turn it into a Pastini Soup later during the week.
