Hope you are all enjoying your weekend! Weekly meal plan (week 22) is just full of yummy recipes. I’m sure there is something in here to keep everyone happy at least one day of the week.
I’m very lucky to be visiting the capital of pasta, pizza, gelato and IFC chicken next week. During my trip I hope to take a slight detour out of the big city and head 110km South of Rome, to a beautiful village perched atop a hill, known as Colle San Mango. This is a very special place to me and one I’ve only ever visited four times before (age 4, 18, and twice when in my thirties with very young kids in tow). Other than being a beautiful mountain top village, Colle San Magno, is my maternal ancestral home, where both my grandparents were born and brought up, and is still home to a number of relatives today. It is also, of course, the birthplace of the best pasta dish in the world, Paolozzi Meat Sauce – hopefully there will be plenty of sampling to do when I get there!
Anyway, I didn’t want to leave you without a meal plan for next week so here’s one with Italy very much in mind.
Weekly Meal Plan (Week 22)
Monday: Sage & Parmesan Gnocchi – (Spoiler alert!) Save any leftover sage leaves for a recipe in next week’s meal plan.
Tuesday: Italian fried Chicken (IFC) – You’ll really be filling up the love bank if you make these tonight. I urge you to try them. They are best served immediately as they do lose their crispness if left too long. I don’t have a deep fat fryer and use a medium sized sauce pan half filled with vegetable oil instead. When done frying keep your oil for next time.
Wednesday: Rosemary & Lamb Koftas – Not Italian but it’s Mediterranean and we all just love these. Simple, tasty, the kids love them, so that makes me very very happy. Serve with flat breads, pita breads or rice and a lovely refreshing cucumber salad.
Thursday: Spaghetti Bolognaise – If you have a batch in the freezer then lucky you! Otherwise, make sure you make a large batch of this yummy, versatile sauce. It will be a lifesaver for you stored in the freezer and from which you can make various other meals over the weeks to come.
Friday: Tuna Melt – Ok, trying to be classy but failing miserably. It’s Friday after all and we’re all partial to a tasty toastie aren’t we?
Saturday: We usually have a ton of food leftover by Saturday and the fridge is stacked with towering tupperware boxes. I like to use up as many leftovers as possible to avoid wastage and to clear the way for the new week. Take a look to see what you have lurking at the back and make your dinner or lunch simple even if it means everyone getting a different meal.
Sunday: Paolozzi Meat Sauce – I don’t normally set a plan for week-end meals, but this week of all weeks, I figured it would be just rude not to include my Paolozzi Meat Sauce!
