Welcome to my Weekly Meal Plan Week 9. This week we welcome in the month of March. That means Spring is on its way (though it doesn’t feel like it ) and Easter is just around the corner – yikes!
For those of you are not familiar with my weekly meal plans they work as follows:
“I post a dinner recipe idea for Monday through to Friday and suggest some possible week-end meals. I may throw in a few breakfast, snack, dessert or packed lunch ideas too. Feel free to mix things up ie: you don’t have to make every single recipe, or on the day stated. I’m always changing days around to suit the family schedule, eg: you may want to make Monday’s recipe on Friday, or you may only want to make one of the recipes during the week – just use the weekly meal plan is a guide not a rule!”
Weekly Meal Plan (Week 9)
Monday: Meat Free Monday meal for us this week will be Cauliflower and Kale Macaroni. If you cannot find kale it’s equally good with spinach.
Kids Packed lunch: Sausage Rolls – because you were super organised and baked some on Sunday!
Tuesday: Is Pancake Day so for diner we’re going to have some savoury pancakes filled with ham and cheese.
For a vegetarian option and what would make a great Meat Free Monday meal one week would be these Leek pancakes with Spinach Kale & Ricotta by Searchingforspice.com
It’s only Pancake Day once a year, so we obviously need to have pancakes for dessert too. I just haven’t quite decided which one yet!
I’ll let you choose:
- Blueberry and maple pancakes from Every Nook & Cranny;
- Burmese Pancakes (Gluten & Dairy Free), by Gillian’s Kitchen;
- Coconut & Lime Freefrom Pancakes (Gluten Free & Vegan), from The Peachicks Bakery;
- Banana Pancakes (Gluten & Dairy Free), from Hijacked by Twins;
- Oat, Almond and Banana Pancakes with Frozen Berry Compote, (Gluten, Dairy & Egg Free), by Easy Peasy Foodie;
- Ricotta Pancakes (Egg Free), by Charlotte’s Lively Kitchen;
Kids Packed lunch: Make Extra pancakes and roll up with filling, wrap in greaseproof paper for lunch the next day.
Wednesday: Shepherds Pie – because we had roast leg of lamb at the weekend and I’ll use the leftover meat to make a lovely pie. Serve with fresh garden peas.
Kids Packed lunch: Ham & Cheese Pockets – Just love the idea of these.
Thursday: Chicken wrapped in pancetta – I’ll be out late on Thursday and I need something dead easy but tasty and comforting. I’ll have these all prepped in a baking tray so when I walk through the door I can simply throw into the oven and be done with it. I serve with crusty bread to mop up all the lovely juices, steamed veg or a salad.
Kids Packed lunch: Fresh bagels with chicken & avocado filling. I didn’t do bagels on Monday and today, and if you’ve made an extra chicken breast it will go deliciously in a bagel.
Friday: Blackened Fish Tacos – We’ve had these before and they are very tasty. I have teenagers who eat more spiced food now but still also have little ones so for them I baked some fish fingers to put in their tacos. Needless to say the fish fingers were a massive hit!
Kids Packed lunch: Fish fingers in pitta breads – You know they’ll love them!
Weekend:
Ideally have a roast so you can reinvent leftovers for one night next week!
We will probably have a joint of slow cooked pork (Boston Butt) which I will then shred and serve with rice or mashed potato. Look out for a couple of re-invented pork based dish in the week to come.
Tip: Bake some sweet treat for packed lunches the week ahead. Why not try these moist and crumbly Apple Crumble Breakfast Muffins
